To be honest I’ve been making these quick and Fluffy Pancakes too much lately, because they are just that! Quick AND fluffy 😋
I love a good pancake . And one of things I love about these fluffy pancakes is that they are just sweet enough to eat plain. No extra sugar on top, and no syrup ! (Though Completely just my preference. )
These pancakes are simple and quick to pull together. A great recipe for kids to try or “help” with. My little boy loves helping me stir.
Optionally you can make this pancake recipe with sour dough by adding ½ cup sourdough discard – best if sour dough has been fed in the last 5 days.
What you need to make Quick and Fluffy Pancakes
What’ll you need to make these quick and fluffy pancakes ?
- 1 medium large mixing bowl
- Whisk
- 1 mixing spatula (or silicon works great)
- measuring spoons and cups.
- frying pan
- spatula to flip pancakes
Ingredients
- 1 Cup All purpose flour
- 3 Tbsp white Sugar
- 2 tsp baking powder (or substitute 1 tsp baking soda)
- 1/2 tsp salt
- 1 Cup milk
- 2 Tbsp Olive oil
- 1 egg
- 1/2 Cup sourdough discard OPTIONAL (fed within the last 5 days)
How to make Quick and Fluffy Pancakes
Whisk dry ingredients together.
Mix in wet ingredients starting with milk. Then add oil and egg.
In a medium to large frying pan heat about a Tablespoon of olive oil or butter.
To prevent burning the butter, use olive oil and butter together.
Once hot, pour in some pancake batter. About a 1/2 cup more or less.
I usually make them medium size so they are fairly easy to flip.
Once bubbles form, pop and are staying open (without filling again ) it’s time to flip.
Once your pan is on the burner for a while you may want to flip a bit sooner as it’ll cook faster once all that heat is built up.
After you flip the pancake let cook for another 20 seconds then place it on a plate or platter.
I like to spread a little butter on them while they’re good and HOT!
This recipe should make about 4 medium- large pancakes.
Serve warm with butter and maple syrup
Or butter and powder sugar
Or just butter, they’re that good!
Quick and Fluffy Pancakes
Ingredients
- 1 cup All purpose flour
- 3 Tspn Sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 Tspn olive oil
- 1 egg
Directions
- Add about a tablespoon of olive oil to frying pan and bring to medium heat on stovetop.
- In medium- large mixing bowl, Whisk dry ingredients together.
- Add in wet ingredients by order, mixing a bit between. Milk, Olive oil, And egg.
- mix together well. Batter will be slightly lumpy.
- once pan is hot pour some pancake batter into pan.
let cook 1 1/2 to 2 minutes. - once bubble, pop open and are standing, (they Are not filling with batter again) flip pancake. Let pancakes cook another 20 seconds.
- place pancake on a plate or platter. Repeat.
- serve warm
